The Forks Over Knives Diet was born out of the transformative power of a whole food, plant-based diet for health. It centers on whole, unrefined or minimally refined plant-based foods and excludes or reduces meat, dairy, eggs and highly refined foods

While leafy vegetables are an important part of a whole-food plant-based diet, they don't contain enough calories to sustain life. Consider that every human body needs to get enough nutritious calories! Insufficient calorie intake can lead to lower energy levels, deprivation, cravings, and even feelings of overeating.

One of the main advantages of a plant-based, whole foods diet is that you don't have to count calories or do portion control. Plant-based foods are much bulkier because they contain more fiber and water than standard American "diet" foods. Although we consume fewer calories overall, these large volumes take up more space, so our stomachs eventually become stretched enough to turn off hunger signals. Therefore, the only way to feed on a whole foods, plant-based diet is to be satiated while consuming fewer calories.
